Little Surprises...

My sister, Sarah is on her way from Nashville to visit us for the weekend. Her husband, Mike is staying back at home so that hopefully he can get a little hiking trip in. We've decided we are going to do some shopping and attempt to be crafty. Several of you have inspired us to give our hands at some projects. We'll share what we come up with.

I have a couple little surprises for Sarah...

Something pretty...

And something sweet...

These are Lemon Cookies and they are delicious! They are even better with a glass of iced tea. The best thing about them is they are made with a mix. I'm normally a "made from scratch kind of girl" but these are one of my favorites. Here's the recipe so you can share them with someone special.

Lemon Cookies:

1 package lemon cake mix
2 T. plus enough oil to equal 1/2 cup
2 eggs
Lemon frosting (store bought)
Heat oven to 350 degrees. Grease cookie sheet. Mix cake mix, oil, and eggs in large bowl with a spoon until dough forms. Drop by teaspoonfuls onto cookie sheet. Bake 8 minutes or until set. Remove to wire rack. Cool and frost.

You can use any flavor of cake mix. I've used a spice cake and cream cheese frosting and you can never go wrong with chocolate!

Enjoy!

Thanks for the lemon cookie recipe..I'll be sure to try them as my daughter loves ANYTHING with lemon.
So tell me....(I know this is probably a silly ?, but I'm not getting it) explain the 2 Tbsp. plus enough oil to make 1/2 C.

    I'm not understanding.

    Clueless in MN.

  2. Hello Christy,

I just came across your blog. Those lemon cookies look yummy. I noticed your 3 adorable dogs. Love that "every blog needs a dog or 3". I totally agree. I have three too. Nice to meet you.

  10. Christy, just wanted to let you know that I made these cookies for the first time this afternoon. We went to a friend's house for dinner tonight, and I needed to take a dairy-free dessert. This was perfect! They were so delicious. Thanks! :)
