Chicken Marsala

How about a little recipe sharing to begin the week? 

Over the weekend I made Chicken Marsala for the first time. It was delicious, and quick and easy. A recipe right up my alley! 

Along with the Chicken Marsala, I made Garlic Mashed Potatoes and Caesar Salad with homemade croutons.

Chicken Marsala

2 skinless, boneless chicken breasts
salt and freshly ground black pepper
1/2 cup flour
olive oil
8 oz. fresh, sliced mushrooms
2 T. butter
1/2 cup sweet Marsala wine
1/4 cup chicken stock
1/4 cup sherry or dry white wine
Optional: 2 T. heavy cream (which I did add)
Garnish with parsley

Split each chicken breast through the middle to make 2 pieces. Place plastic wrap over them and pound each one flat using a meat tenderizer/mallet until they are about a quarter inch thick. (I didn't split the chicken. The pieces I had were pretty thin to begin with.) Season with salt and pepper on both sides. Place some flour on a plate and dredge each piece of chicken.

Heat olive oil over medium-high heat and when the oil is hot, fry each piece of chicken for 3-4 minutes on each side until they are golden brown. Remove chicken and place them on a serving platter covering them with foil.

Reduce the heat to medium and add butter and mushrooms. Saute mushrooms for 4-5 minutes. Season lightly with salt and pepper. Add marsala wine, sherry, cream and chicken stock allowing the liquid to reduce slightly- approx. 3 minutes. Pour mushrooms and sauce over chicken. Garnish with parsley.

It's The Little Things

I've really missed sitting at my desk with the computer before me and having my fingers type away at the keyboard. It's a time for me to reflect and just write simple words and thoughts of where I am. The Lord never fails to speak tenderly to my heart through my journaling. Right now, I am just trying to stay on top of things here at home. You know the normal everyday stuff... laundry, meal planning, grocery shopping, track practice, raising one pre-teen and two teenagers, making God the first priority in my life, cleaning, staying connected with my husband, and everything else!

Today was a really good day though. Most of all because it truly is sometimes just about the little things that bring so much joy.

Things like...

Having a very much needed time with the Lord this morning. I came away so refreshed and knowing that because of Him, I am a woman who can boldly approach the throne of grace.

It's always a good day when the sun is shining, the birds are chirping with the excitement of Spring, and there is a gentle, warm breeze that blows across my face when I walk outside. And, I wore flip-flops!

Driving in the car with Ben and talking about Heaven.

Opening the mailbox today and finding the box with my new necklace. I was thrilled to find Lynn at Shabby Chic Designs who was able to make a gold necklace for me. It has each of my children's names on it and I love it!!!

I am also welcoming Spring by having a little "sale" in our etsy shop. What woman doesn't love a sale right?

Something Fun... A GIVE AWAY!

Today I am off to run some errands. I am regretting that I didn't do it yesterday when it was sunny and warm because today, rain is in the forecast. Loading my car up with groceries in the rain isn't my idea of fun.

It's sunny and 56 degrees here today. I love it!!! It certainly is making me stop and dream about all things Spring...

Fresh cut grass.
Birds chirping in the trees.
Finally being able to wear flip-flops. Which also means some new colors of nail polish.
Tulips and daffodils
Baseball games and track meets.
Watching the curtains blow in the wind because the windows are open.
Running outside again.
Reese Peanut Butter Eggs
And the reminder that in His time, He does make all things new.

I have been somewhat on the mend this week after an outpatient surgery I had last Thursday. While my recovery has been a little longer than I was anticipating, I am finally feel myself again.

Taking it easy has allowed me to sit and sew. And sew. And sew. Just check out our etsy shop!

I have been way behind on my picture project, but am now up to date. Thank goodness. I don't like knowing that I am behind on something. It's the kind of thing I lose sleep over.

I am so looking forward to Spring! I've noticed the sun rising a little earlier and setting a little later. My husband is talking of wearing his flip flips already, but I am insisting he at least wait until all the snow melts.

This Saturday has been one filled with rest, sunshine, 45 degree weather, and some baseball.
